Slow-Cooked Beef and Root Vegetable Stew
February 20, 2026
Few meals are more universally comforting than a slow-cooked beef stew. The kind that fills the house with its aroma for hours, that turns tough cuts of beef into fall-apart tenderness, and that brings together the deep, earthy flavors of root vegetables into something that tastes like it took all day — because it did.
For senior residents, beef stew offers several important advantages: the low-and-slow cooking method produces exceptionally tender meat that requires virtually no chewing effort, the vegetables soften completely, and the broth is rich in collagen and minerals that support joint and bone health.
This recipe is designed for a slow cooker (Crock-Pot), making it ideal for care home kitchens where the morning prep can be brief and dinner practically takes care of itself. It serves 6 generously and reheats beautifully the next day — often tasting even better.
Ingredients
- 2 lbsbeef chuck roast, cut into 1.5-inch cubes
- 3medium carrots, peeled and sliced
- 3medium potatoes, peeled and cubed
- 2parsnips, peeled and sliced
- 1medium onion, diced
- 3 clovesgarlic, minced
- 2 cupslow-sodium beef broth
- 1 can (14.5 oz)diced tomatoes, drained
- 2 tablespoonstomato paste
- 1 tablespoonWorcestershire sauce
- 1 teaspoondried thyme
- 1 teaspoondried rosemary
- salt and pepperto taste
- 2 tablespoonscornstarch mixed with 2 tbsp cold water (for thickening)
Instructions
1Season beef cubes generously with salt and pepper. For best flavor, sear in a hot oiled pan for 2-3 minutes per side until browned. (This step is optional but adds depth.)
2Place onion, garlic, carrots, potatoes, and parsnips in the bottom of the slow cooker.
3Add beef on top of the vegetables. Mix together beef broth, diced tomatoes, tomato paste, Worcestershire sauce, thyme, and rosemary. Pour over the beef and vegetables.
4Cover and cook on LOW for 8 hours or HIGH for 4-5 hours, until the beef is completely tender and the vegetables are soft.
5In the final 30 minutes of cooking, stir in the cornstarch slurry to thicken the broth. Replace the lid and continue cooking until thickened.
6Taste and adjust seasoning. Serve in deep bowls with soft bread rolls or over mashed potatoes for a complete, warming meal.
