Chicken Luau Soup
March 13, 2026
Few dishes capture the spirit of Hawaiian home cooking quite like Chicken Luau Soup. Inspired by the traditional Hawaiian luau dish made with taro leaves and coconut milk, this lighter soup version is deeply nourishing, fragrant, and gentle enough for seniors with sensitive digestion or tender teeth.
In many Hawaii households, a pot of luau soup simmering on the stove signals comfort, family, and the warmth of aloha. This recipe uses chicken thighs for their tenderness and flavor, and while fresh luau (taro) leaves can be found at Hawaiian farmers markets and some Asian grocery stores, frozen taro leaves or baby spinach work as a readily available substitute.
Rich in protein, iron, and vitamins, this soup is as nourishing as it is comforting — perfect for a cool evening on any island.
Ingredients
- 2 lbsbone-in chicken thighs, skin removed
- 8 cupslow-sodium chicken broth
- 2 cupstaro (luau) leaves, chopped, or baby spinach
- 1 can (13.5 oz)light coconut milk
- 1 mediumonion, diced
- 4 clovesgarlic, minced
- 1 tablespoonfresh ginger, grated
- 2 tablespoonsolive oil
- 1 teaspoonHawaiian sea salt
- 1/2 teaspoonblack pepper
- 2green onions, sliced (for garnish)
Instructions
1Heat olive oil in a large pot over medium heat. Add onion and cook until softened, about 5 minutes. Add garlic and ginger and cook for 1 minute more until fragrant.
2Add chicken thighs to the pot and brown lightly on each side, about 3 minutes per side. They do not need to be cooked through at this stage.
3Pour in the chicken broth and bring to a boil. Reduce heat to low, cover, and simmer for 35 minutes until the chicken is tender and cooked through.
4Remove chicken thighs and let cool slightly. Shred the meat off the bones using two forks, discarding bones. Return shredded chicken to the pot.
5Stir in the taro leaves (or spinach) and coconut milk. Simmer uncovered for 10 minutes. Season with Hawaiian sea salt and pepper.
6Ladle into bowls and garnish with sliced green onions. Serve with steamed white rice on the side if desired.
