Banana Oatmeal Pancakes
February 21, 2026
Pancakes are one of those universally beloved breakfast foods that bring a smile to almost anyone's face. This version — made with rolled oats and ripe bananas instead of refined flour — offers all of the pleasure of a classic pancake breakfast with significantly more nutritional value.
Oats provide soluble fiber that helps regulate blood sugar and supports heart health, which is particularly important for seniors managing diabetes or cardiovascular conditions. Ripe bananas act as a natural sweetener and binder, reducing the need for added sugar. The result is a tender, slightly sweet pancake that's satisfying without being heavy.
These pancakes are soft enough to eat comfortably even for residents with dental limitations, and the batter comes together quickly with a blender — making them ideal for busy care home mornings. Served with a drizzle of honey and sliced fresh fruit, they feel like a genuine treat.
Ingredients
- 2 cupsold-fashioned rolled oats
- 2 largeripe bananas
- 2 largeeggs
- 1/2 cupmilk (dairy or plant-based)
- 1 teaspoonbaking powder
- 1/2 teaspooncinnamon
- 1/4 teaspoonvanilla extract
- pinchsalt
- 1 tablespooncoconut oil or butter for cooking
- honey and sliced fruitfor serving
Instructions
1Add oats to a blender or food processor and blend into a coarse flour, about 30 seconds. This is your oat flour base.
2Add bananas, eggs, milk, baking powder, cinnamon, vanilla, and salt to the blender with the oat flour. Blend until smooth. Let batter rest for 5 minutes to thicken.
3Heat a non-stick pan or griddle over medium-low heat. Add a small amount of coconut oil or butter and swirl to coat.
4Pour approximately 1/4 cup of batter per pancake. Cook until bubbles form on the surface and the edges look set, about 3 minutes. Flip and cook 2 minutes more.
5Serve warm with a drizzle of honey and sliced fresh banana, papaya, or strawberries. These pancakes reheat well in a toaster or microwave the next day.
