Tender Baked Salmon with Mango Avocado Salsa
February 22, 2026
Salmon is one of the most heart-healthy proteins available — rich in omega-3 fatty acids that support cardiovascular health, reduce inflammation, and may help preserve cognitive function. For seniors, it offers the added advantage of being naturally soft and flaky when properly cooked, requiring no strenuous chewing.
This recipe pairs simply seasoned baked salmon with a fresh mango avocado salsa that brings the colors and flavors of Hawaii to every plate. Ripe mango and creamy avocado are both widely available across the islands and complement the rich, buttery salmon beautifully.
This dish comes together in under 30 minutes and can be served with steamed rice or roasted sweet potato for a complete, colorful, deeply satisfying meal. It's a perfect example of how eating well for health doesn't mean sacrificing pleasure.

- 1/2 teaspoonHawaiian sea salt
- 1/4 teaspoonblack pepper
- 1 largeripe mango, peeled and diced small
- 1 largeripe avocado, diced
- 1/4 cupred onion, finely diced
- 2 tablespoonsfresh cilantro or green onion, chopped

Instructions
1Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper or foil.
2Pat salmon fillets dry. Drizzle with olive oil and season with garlic powder, paprika, salt, and pepper on both sides.
3Place salmon on the prepared baking sheet and bake for 12-15 minutes until the fish flakes easily with a fork. Avoid overcooking — the center should still be slightly translucent.
4While salmon bakes, prepare the salsa: gently combine mango, avocado, red onion, cilantro, and lime juice in a bowl. Add jalapeño if desired. Season lightly with salt.
5Remove salmon from oven and let rest for 2 minutes. Plate each fillet and spoon a generous portion of mango avocado salsa over the top. Serve immediately with steamed rice.
